Cinnamon ?
Does anyone know what desert you can make with cinnamon besides cinnamon rolls or bread?
Fruit Salsa and Cinnamon Chips
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor
In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.
Cinnamon Pickles
2 gallons preparedcucumbers, peeled,ends removed,cored and cut into rings or sticks(measure after slicing)
8 1/2 quarts water
2 cups pickling lime
1 tablespoon alum
2 cups vinegar
2 cups water
1 1/2 ounces red food coloring
10 cups sugar
6 cinnamon sticks
8-10 ounces red cinnamon candies
Prepare the cucumbers: peel, removed ends, core, and cut into rings or sticks. Combine water and lime. Soak prepared cucumbers in lime-water for 24 hours. Drain and wash 3 times in cold water. Cover with cold water and let sit for 3 hours. Combine alum, vinegar, 2 cups water, food coloring, sugar, cinnamon and red hots to make a syrup. Add drained cucumbers and simmer, covered, for 2 hours. Let stand overnight. Drain off syrup, reheat and pour over pickles daily for 3 days. Pack in hot jars and seal.
Skyline Chili
2 1/2 pounds lean ground beef
2 cans (8 ounces each) tomato sauce, or 1 large can (15 ounces)
1 can (5 ounces) tomato paste
4 tablespoons chili powder
1 1/2 to 2 teaspoons cinnamon
1/2 tsp. allspice
1 1/4 tsp. salt
1 tbsp. vinegar
1 tsp. black pepper
1/4 tsp. garlic powder
1 tsp. onion salt
2 tsp. steak sauce
1 cup water
Brown beef lightly. Put all ingredients in crock and mix together well. Cover and cook on LOW for 8 to 10 hours. If necessary, add more water. Traditionally served with spaghetti and topped with cheese. Makes 4 to 6 servings.
Apple Onion Relish
2 tablespoons vegetable oil
3 onions, chopped
3 garlic cloves, minced
1/2 cup sugar
1/3 cup cider vinegar
1/2 teaspoon ground cumin
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
2 Golden Delicious apples, peeled, cored and diced
1 cup golden raisins
2 tablespoons apple jelly
1/4 teaspoon salt
Heat oil in a large nonstick skillet. Add onions, garlic and sugar; cook, stirring occasionally, 35 minutes or until caramelized. Stir in vinegar, cumin, ginger and cinnamon; cook 7 minutes. Add apples and raisins; cook 5 minutes.
Remove from heat and stir in jelly and salt. Serve warm or at room temperature. Serves 12.
